In 1610, someone dug this well by hand into the rock of Valletta. Stone was carried out a bucket at a time, and a spiral staircase was cut down into the dark so that water, wine and oil could be kept where the heat never reaches. For four centuries the cave held them. When we opened the wooden door on the street and walked down those same stairs, it was clear the room had been waiting for fire.
